Baked Potato Soup

Hopefully y'all are all cozied in and keeping warm. Last time I looked at the thermometer it was 35. So that means it is gonna get even colder during the night. Better keep that sweater on Miss Priss. Needless to say when she stepped out a few minutes ago she hustled her little booty back inside. Thank goodness.

I love seeing all the Christmas lights all aglow. I did a little tour around the Wheelers home the other night. Boy what beautiful set up. It is a wonderful little drive to show the kids.

Better get a recipe posted for today. The recipe comes from 'the all-new ultimate Southern Living Cookbook'

Baked Potato Soup Yield 12 cups.

5 large baking potatoes, baked
1/4 cup butter or margarine
1 medium onion, chopped
1/3 cup all-purpose flour
4 cups half-and-half
3 cups milk
1 teaspoon salt
1/8 teaspoon pepper
2 cups (8 ounces) shredded Cheddar cheese
8 bacon slices, cooked and crumbled

Peel potatoes; coarsely mash with a fork.
Melt butter in a Dutch oven over medium heat; add onion, and saute' until tender.
Add flour, stirring until smooth.
Stir in potatoes, half-and-half, milk, salt and pepper; cook over low heat until thoroughly heated.
Top each serving with cheese and bacon.

This sounds like a great recipe for this cold weather.

Better get back to my laundry.
