Cherry Tomato and Mushroom Salad

Cherry Tomato and Mushroom Salad

1 pound tomatoes
1 pound fresh mushrooms
1/4 cup vegetable oil
1/2 cup apple cider vinegar
1 (0.7-ounce) package Italian salad dressing mix
Coarsely ground black pepper

Cut cherry tomatoes in half.
Halve any particularly large mushrooms.
In a glass jar with a tight lid, combine the oil, vinegar, salad dressing mix, and pepper to taste.
Combine tomatoes and mushrooms in a salad bowl; pour dressing over vegetables, tossing gently.
