Persimmon Cake

Jane, Jane, Jane....Your Persimmon Cake is awesome. Everyone at the Thursday card class loved it! I kept taking little tastes all day long. MMMMMMMMMM...

This cake is so moist.

Here is the recipe for all you bakers out there.

Persimmon Cake

1 1/2 cups margarine

2 1/2 cups sugar

3 eggs

1 1/2 cups plain flour

2 teaspoons soda

1/2 teaspoon salt

2 teaspoons all spice

2 teaspoons cinnamon

2 cups chopped nuts

2 cups raisins

2 cup ripe persimmons, mashed

Cream margarine and sugar; add eggs and beat until light and fluffy.

Mix dry ingredients (sift together), then add raisins and nuts.

Mix until well coated.

Add to sugar and egg mixture and mix well.

Add mashed persimmons.

Bake 2 hours at 275 degrees in tube pan.

Watch time and temperature so cake will not burn!

This has been a busy week. The card classes have been full. We learned to use several new tools. The one hour layout had some beautiful flowers today. The class will be repeated on Thursday night.

Wednesday, we played hooky and went to Valdosta. I'm getting too old to run the roads late at night. I have been dragging ever since. Tonight we have the crop night so tomorrow will be very interesting.

See Ya!
